You might simply try grilling the peppers, then hollow them out. Fill with some shredded cheese (the Mexican cheese blend in the market is good, but if you don't have that, a blend of cheddar and jack would work well), then bake until the cheese melts. Serve with salsa. Sort of like a chile relleno, but no egg batter+frying. The article "How to Make Chile Rellenos" gives the process for making a true version, but I'm sure it could be made lighter by using only egg whites, less flour, lite cheese, or maybe even baking instead of frying.
