I only have a few (sad...because I LOVE a good cookbook), but my favorite is the Vegetarian Family Cookbook. It's healthy, kid-friendly, and it has the nutrition info. right on the recipe page. I know, there is a plethora of websites and recipes and all that online, but I just love a good old-fashioned cookbook!
Oh how badly I want EDBV by Dreena. I read her blog and I check her recipe blog alot. She is fabulous! I really want the Vegan Cupcakes Take Over the World...but I just love baking way more than should be allowed...and I'm afraid I wouldn't stop eating :~P .

I also really really love baking and am very cheap. So, every so often I'll go to Barnes and Noble and copy a cupcake recipe out of Vegan Cupcakes Take Over the World to try. Whoops. But I wanted to make sure they were worth it! They were s'more cupcakes, and let me just tell you, I WILL be buying this cookbook! They were amazing! I'm going to try and find it used like my Vegan with a Vengeance score the other week. And Dreena's cookbook is also amazing. I haven't had a bad recipe yet!
Have you heard of Vegan Planet by Robin Robertson? My boyfriend and I are trying to incorporate more vegetarian meals into our diets and I got this from the library. It has given us a ton of great ideas to try. My favorite Sweet Potato and Black Bean Enchiladas... Two of favorite foods. Anyway, it has over 400 recipes and they all seem to be with ingredients that are easy to find.
I'm pretty sure i can't call myself a full fledged vegetarian yet, but my diet seems to be heading in that direction. I've been curious about a vegetarian and/or vegan diet for some time. The other day I finally decided to pick up a vegan cookbook to give me some ideas. It's called How it all Vegan by Tanya Barnard and Sarah Kramer. So far I have made two of the soups and they were both really good. I love looking at cookbooks too!
