Well Day one of the week of getting back on track went well. Out of the goals I set for yesterday:
1) Drink lots of water!!! Accomplished...although I could always drink more!
2) Re-start P90X Phase 2...today's workout: Core Synergistics Accomplished...I did the video...can't say I "brought it" very hard, but hey it's a start!
3) Stay OP this week (which means I need to go to the grocery store today!!!) Went to the grocery store, and only used 1 flex point yesterday...so I say Accomplished!
4) Step away from the Halloween candy that is in abundance, especially with the evil TOM monster telling me to eat it!!! So far so good...I didn't eat ANY candy yesterday!
I went to the store last night and bought stuff to make a huge batch of my Ranch Chili! It's so cold here, so it was the perfect chili night, plus it's so low point, that it's great to have on hand and in the freezer for lunches or a quick leftover dinner! I'm not sure if I've ever posted the recipe on here, so here it is:
Ranch Chili (double batch): 3 points per Cup - This is also CORE I believe
2 lbs. lean hamburger meat
1 large onion
2 cans black beans
2 cans pinto beans
2 cans spicy chili beans
2 cans corn
2 cans diced tomatoes
2 cans rotel
2 pkgs. Reduced sodium taco seasoning
2 pkgs. Ranch dressing mix (not dip mix)
Brown meat and onion. Drain. Add additional ingredients and cook over medium heat for 30-45 min. (I also do this in the crockout on low for 6-8 hours). I usually serve over 1/2 cup of Brown Rice to bulk it up. It's so filling and hits the spot! I didn't do any snacking after eating it last night because I was SO FULL!!! I love that! And now we have lots frozen for lunches, and a large container in the fridge for quick dinners this week. The husband loves it too, and I am addicted to it especially during these cold nights!
My goals are the same again for today: Water, P90X Day 2, Stay OP, and NO CANDY!!! Hopefully I"ll have another good day.
