WOW--it's been a while since I've posted. This wedding stuff is getting out of control. (Bachelorette party on SATURDAY!!!) My maintenance mode has been pretty much eat what you want, but exercise portion control and make good choices. I've been doing well, still in my maintenance window. My natural weight fluctuates so much that I try to stay between 131 and 135. If I go over that, I will definitely go back to strict point control.
I've been trusting my body to tell me when to stop eating, and trusting my mind to tell me what is good to eat, and what I should stay away from. So far it's working well. We grill a LOT during the summer months, so grilled chicken breasts, lean pork cuts, etc. are an easy staple for me. I also enjoy tons of fresh fruit--whatever's in season. Right now I'm loving fresh green beans, asparagus, cherries, and frozen raspberries. Soon, strawberries will be readily available through June, and we'll pick and eat until our hearts' content, and freeze the rest. Wild black raspberries follow. Then, in mid-July through late August, green apples overload the branches of my parents' trees! YUMMY! I love tart, green apples. I could love on fruit if I didn't need other nutrients :)
Farmers markets are poppint up all over here in Iowa, and I love it. Local, fresh produce is the way to go.
The fiance loves angelfood cake, and at 2 points a slice, it makes a great desert when you scoop half-frozen raspberries over top--mmmmmm....One of my other summer staples is grilled pineapple. I cut up a giant pineapple and skewer it on bamboo sticks, grilling them for a few minutes on each side. Pineapple gets very sweet, almost honey-like juice when grilled. We're having both our familes out to our house for Father's Day in a few weeks, and that's definitely on the menu.
OK, I've officially talked myself hungry :) What are your favorite summer staples?
