Core Freezer Recipes Needed!

Hey guys!

I'm going to be needing alot of core recipes that can be easily frozen for up to 2 months. I have to cook alot at once to keep up with my schedule in the Fall, so I want to be prepared and have some recipes to look forward to working on.

Any ideas?

I made a "core" tamale pie with polenta on the bottom, layered with core ingredients like salsa and beans...and topped with fat free shredded cheddar. It was yummy! Sorry, I don't have the recipe... :)

This is my favorite, and I freeze it ALL the time:

Ranch Chili

1 lb. lean hamburger meat (I use 96%)
1 onion
1 cans black beans
1 can pinto beans
1 can chili beans
1 can corn
1 pkg. reduced sodium taco seasoning
1 pkg. hidden valley ranch dressing mix
1 can diced tomatoes
1 can rotel tomatoes with green chilies

Brown hamburger and onion. Drain. Add all remaining ingredients - do not drain cans into your crockpot. Cook for several hours on low.

I got it off a Core board on WW.com, but I'm not a core follower, so I'm not totally sure of it's "coreness" :-)

I do a number of core recipes that freeze well. Google for "honey baked lentils" which has honey, but is otherwise core. Also, I like to do a large batch of barely, brown rice, or other grain and freeze in individual (or in my case, 2) servings. Then I can just make a quick stirfry and defrost the rice. Finally, I often make a large batch of pulled pork or chicken on the grill or in the crockpot. You can opt to not have bbq sauce on them and use a vinegar or mustard sauce instead.

Veggie Couscous Salad
Cook 1 c. of whole wheat couscous in chicken broth
(follow package directions and substitute chicken broth for water).

Chop one red pepper very into very small pieces, about 1/3 of a cucumber,
into very small pieces, about half a pint of cherry tomatoes in half,
1/3 c. green onions. Mix those together with about 1/2 c. frozen peas.

Fluff the couscous and add to the veggie mixture.

Dressing: Take about 2-3 tablespoons of lemon juice and whisk it with
about 1 tablespoon of olive oil. Add 1 teaspoon of minced garlic
and a dash of salt and pepper. Mix together and add to the couscous mixture.

You can add and take away any ingredient.
For example, add different veggies, use more couscous, make more dressing.

It's all core - and very low points.
