recipe for blueberry muffins, 3-point value, that doesn't have yogurt as one of the

Roni, thanks for your reply. Actually, I was given a blueberry muffin recipe by a friend in
my WW group. She told me this week that she had misplaced hers and wondered if I
would bring the copy she gave me with me to the next meeting. Well, the copy she gave
me (I hadn't requested it) is no longer in my possession, and I wanted to be able to come
up with another version for her. In fact, I prefer the recipe that I found in a WW cookbook,
and it uses yogurt, but hers did not.
I believe I am going to enjoy this website. I am new at this Internet communication, al-
though I have used e-mail for many years.
I have lost 52 pounds and am trying to maintain. This is the second time I have reached
goal weight and found myself in the position of maintaining, so you can see I was not
completely successful the first time around. :-( I have never been a physically active per-
son, preferring instead to cook in the kitchen or read a book, so finding an exercise pro-
gram that is somewhat exciting for me is also a challenge. I have mainly been walking
on my street and also have done some work with weights.
Well, I didn't intend to write a book. Thanks for "listening." :-)
Actually, I have another challenge for you, if you find this post again. Many of your baked goods on your greenlitebites.com site use VitaMuffin mixes. I'd rather not use them as they are expensive. Any "from scratch" recipes of the yummy VitaMuffin options??
Here's a recipe I have....not sure where I got it, but that person tells where they got it. I've not made these, but they sound good.
Whole Grain Blueberry Muffins
got this recipe off of recipe zaar.com. They were surprizingly good and my kids loved them too:
1 1/2c whole wheat flour
1/2c oatmeal
1/4c sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c nonfat milk soured with vinegar
1 TBS applesauce
2 tsp canola oil
2 egg whites
1 c blueberries fresh or frozen
mix dry ingredients in a big bowl
mix wet ingredients in a small bowl
pour wet into dry and mix until combined and fold in berries
spoon into paper lined muffin pan (spray papers with nonstick spray bake 18-20 min at 400
Cal: 96 Fat: 1.2 Fiber: 2.3
I also added 1/3 c bran and some raw sugar on top before baking and some "extra" blueberries might have fallen into the bowl when measuring... ;) And I didn't know how to sour the milk so I used buttermilk instead

will be one that will satisfy my friend who gave me a recipe which I no longer have in my
possession. :-) I certainly appreciate your response.
The soured milk is a replacement for buttermilk, actually :) If you don't have buttermilk in the future, simply put one Tablespoon of vinegar into a measuring cup, then measure the milk according to the recipe (1 cup in this recipe for example). Let it sit for 5 or 6 minutes to sour it.
