Does anyone have any quick lunch ideas? I am getting tired of WW dinners and salads. Please help, I don't want to get burned out on the same lunch everyday.
Progresso has that line of 0-point soups that might be a good choice. I have also begun buying the
WW cheese, now available at Kroger and Ingles in my area. There are individually packaged string
cheese, cheese slices, and grated cheese options. I have a WW recipe for a chicken salad that is
good in a tortilla, and I like to try to find the one-point ones. Last night's dinner leftovers seem to be
good for lunch, too. :)
I like to make wraps for lunch. You can do different veggies, meats and cheese. I use the 1 point large tortillas. I put fat free ranch dressing or dip or laughing cow cheese on it. Add some baked chips and it is a yummy lunch. You could also make some low point soups in a big batch and freeze some of it. Just a few ideas. Hope it helps!
I make it a point to never actually "prepare" anything for lunch. My lunches each day consist of a frozen meal by Healthy Choice, WW, or Lean Cusine (because they all list the points values on the package). Sometimes I'll switch it up and have a microwavable soup bowl by Healthy Choice with toasted wheat bread or some cheese itz or cheese nips in the 100 calorie bags. I add fresh fruits, veggies, or a salad to balance things out and always include a sweet dessert type thing too. For dessert I may have a 100 calorie pack of cookies or candies, a WW snack cake or cookie, or a sugar-free jell-o cup or SF jell-o pudding cup.
Hello, all! TheLadyCampbell asked for this. I hope others will find it helpful, too. This is a recipe I
actually got off the WW website. It is for Cranberry Nut Turkey Salad, but I often substitute chicken.
I find the two are interchangeable in most recipes.
1 pound boneless, skinless chicken, cooked and cut into 1/2-inch cubes
1/3 cup fat-free manonnaise
1/4 cup low-fat plain yogurt
1/4 cup scallions, chopped
1/4 cup chopped walnuts, toasted
2 Tbsp. dried cranberries
1 Tbsp. Dijon mustard
1/8 tsp. salt, or to taste
1/8 tsp. black pepper, or to taste
Combine all together in bowl and mix well. This can be served over salad greens or anyway you
prefer. 4 servings, with a points value of 5 for that many servings. I find I am able to "squeeze" out
more servings sometimes. :)
Visit my site and get some ideas. I usually make leftovers of what I had the night before. I love soups, wraps, tacos, baked mostacolli, stir fry is my favorite!
1 cup broccoli slaw
1 carrot, diced
1-2 oz. whole wheat spaghetti
1/4 red onion, sliced
a few water chestnuts
1 tablespoon soy nuts
2 tablespoons "House of Tsang" brand Thai Peanut sauce (in the asian aisle)
I'll sometimes make myself a veggie burger (on a bun or WW English muffin), and eat it with a potato, zucchini and onion grilled on my George Foreman grill.
Another idea: A Flat Out flatbread smeared with tomato paste and topped with 7 slices of turkey pepperoni, 1/4 cup LF mozzarella. Sometimes I'll put some really thinly sliced mushroom or onion on it, too. I bake it on a pizza stone for about 10 minutes and drizzle it with 1 tsp EVOO (gotta get in that healthy oil!).
I've always been skeptical of veggie products, but I recently tried Morningstar veggie chicken patties and corndogs. They are both delicious and I would never know they weren't the real thing. The chicken patties are 3 points, and I eat them with a 1 point bun. The corndogs are 3. I'm going to stick them at the freezer at work for lunches.
I love making sandwiches with bagels. I use everything bagels (5 points), add 1 point of turkey, 1 slice of cheese, and a little fat free mayo for a 7 point sandwich. I normally pop it in the microwave.
I'm also going to start cooking my favorite recipes on Sundays and portioning them out into small containers to take to work.
I love pizza bagels!!! Thomas makes 100 calorie bagels then use spaghetti sauce and lf cheese it's about 3-3.5 pts per a half, but it satifies that pizza craving fyi one cheese pizza slice is about 7 pts.
I know a lot of people who do this. I'm going to cook extra when I cook at night and put the leftovers in a container. I think it'll be nice to have real food for lunch. I am sick of frozen dinners.
