Not so good start....

Well today was the big day....and it didn't start out so great. I didn't make it back into town until early this morning and then I went straight to the office! I blew my plan at around 6:30 this morning when I pulled into a drive thru and got a cup of coffee and a biscuit. I was STARVING! So then comes lunch...I had nothing packed so I ended up eating a grilled chicken salad from MCDonalds. I then go home after work, feeling like crap.... and ate a hand full of popcorn and a tortilla roll. I d… Continue

I am still out of town and will return home tomorrow. Being out of town an extra day is not allowing me to post a "beginning" photo, but I promise to post it when I get back home. I didn't get to go to the grocery store either. :( I have planned out my meals and made an awesome grocery list! I also have a schdule for my AP's. Now it is time to put my… Continue

Hey Natasha!

As far as going vegan on a budget, I'd say it's really easy. It's either cheaper than how I was eating before (meat is darn expensive) or lateral. Either way, it's definitely not more expensive.

What I do is just shop for what's on sale. Especially produce, I wait to see what's on sale that week and that's what I plan my meals around. In the summer I stick to the Farmer's Market as much as possible because their produce is so incredibly cheap! Eating organic produce can definitely be expensive, but I stick to the plan that I only buy organic if it's something I'm eating the skin of or it's on sale. I wish I bought more organic produce, but alas, I'm cheap. I eat A LOT of fresh fruit and vegetables, and really I can't afford to buy organic everything. I'm choosey with what I do buy organic, and I buy a lot of frozen vegetables too.

For protein, we use can/dried/frozen beans, tofu, tempeh, soy milk, soy yogurt, anything we can find! We just stick to the cheapest options we can find.

The biggest thing is to stay away from packaged food. That stuff is a disaster for your budget and your health. We buy a few packaged things (high fiber cereals, my husband's beloved Triscuits) but stick to whole, fresh foods as much as possible. Just because a packaged food has a "vegan" label does NOT mean it's healthy!

Shoot me your email address at angie.camper@gmail.com and I'll send you a spreadsheet I have with a whole bunch of recipes. Also check www.fatfreevegan.com and www.happyherbivore.com for great, healthy, vegan recipes. And feel free to ask me ANY questions about going vegan (best thing I've ever done for myself) or weight loss. I'm mildly obsessed with talking about both :)

i've never really been a dessert person, but I am a starch person. I love corn, bread, Mexican food, and the book on insulin resistance really made sense to me because by eating these foods, it actually makes me want them more which of course starts a cycle. It totally makes sense.
